Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups mixed vegetables (e.g., bell peppers, zucchini, broccoli)
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a sheet pan, place the mixed vegetables. Drizzle with olive oil, and sprinkle with Italian seasoning, salt, and pepper. Toss everything together so it’s well-coated.
  3. Push the veggies to one side of the pan. Place the chicken breasts on the other side and season with salt and pepper.
  4. Spoon marinara sauce over the chicken, then top with mozzarella and Parmesan cheese.
  5. Bake for 20-25 minutes, until the chicken is cooked through and the cheese is bubbly and golden.
