- 2 chicken breasts
- 2 sweet potatoes
- 1 cup rice (brown or white)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 cup broccoli or spinach (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes. Toss with olive oil, garlic powder, paprika, salt, and pepper.
- Spread on a baking sheet and roast for 25-30 minutes until tender.
- While the sweet potatoes roast, cook the rice according to package instructions.
- Season the chicken breasts with salt and pepper, then grill or pan-sear for about 6-7 minutes per side.
- To assemble, layer rice in a bowl, top with roasted sweet potatoes, and add sliced chicken. Add optional veggies on top and serve warm.
Notes
For added flavor, serve with balsamic glaze or tahini sauce, and pair with a green salad or coleslaw.
