Instructions
- Preheat the oven to 425°F (220°C).
- Toss the cubed sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper on a baking sheet. Spread them in a single layer.
- Roast in the oven for 25-30 minutes until tender and caramelized, stirring halfway for even cooking.
- While the sweet potatoes are roasting, season the diced chicken with salt and pepper. Cook the chicken in a skillet over medium heat for about 6-8 minutes until golden and cooked through.
- In a bowl, mix the cooked rice, roasted sweet potatoes, and cooked chicken until well incorporated. Serve warm, topped with fresh greens or herbs if desired.
