Ingredients

  • 2 medium sweet potatoes, peeled and cubed

  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cubed sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper on a baking sheet. Spread them in a single layer.
  3. Roast in the oven for 25-30 minutes until tender and caramelized, stirring halfway for even cooking.
  4. While the sweet potatoes are roasting, season the diced chicken with salt and pepper. Cook the chicken in a skillet over medium heat for about 6-8 minutes until golden and cooked through.
  5. In a bowl, mix the cooked rice, roasted sweet potatoes, and cooked chicken until well incorporated. Serve warm, topped with fresh greens or herbs if desired.
