Instructions
- Preheat the oven to 400°F (200°C).
- Peel and dice sweet potatoes, toss them in olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25-30 minutes until tender.
- Cook the rice as directed on the package.
- Season the chicken with garlic powder, paprika, salt, and pepper. Cook in a skillet over medium heat for about 6-7 minutes per side until fully cooked. Let rest before slicing.
- In a large bowl, mix the cooked rice, roasted sweet potatoes, sliced chicken, and choice of vegetables.
