  • 2 medium sweet potatoes
  • 1 cup rice (brown or white)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into bite-sized cubes. Toss them in a bowl with olive oil, salt, pepper, garlic powder, and paprika until well-coated.
  3. Spread the sweet potatoes out on a baking sheet and roast for 25-30 minutes, or until they are tender and golden brown.
  4. While the sweet potatoes are roasting, cook your rice according to the package instructions.
  5. Season the chicken breasts generously with salt and pepper and sear them in a skillet over medium heat for about 6-7 minutes on each side, until fully cooked.
  6. Let the chicken rest for a few minutes before slicing it thinly.
  7. To assemble the bowl, start with a serving of rice, add the roasted sweet potatoes, and top with the sliced chicken. Garnish with fresh herbs if desired.

For a vegetarian option, substitute chicken with tofu and seasonal veggies for sweet potatoes.
