- 2 medium sweet potatoes
- 1 cup rice (brown or white)

- 1 teaspoon garlic powder
- 1 teaspoon paprika

Instructions
- Preheat your oven to 400°F (200°C).
- Peel and dice the sweet potatoes into bite-sized cubes. Toss them in a bowl with olive oil, salt, pepper, garlic powder, and paprika until well-coated.
- Spread the sweet potatoes out on a baking sheet and roast for 25-30 minutes, or until they are tender and golden brown.
- While the sweet potatoes are roasting, cook your rice according to the package instructions.
- Season the chicken breasts generously with salt and pepper and sear them in a skillet over medium heat for about 6-7 minutes on each side, until fully cooked.
- Let the chicken rest for a few minutes before slicing it thinly.
- To assemble the bowl, start with a serving of rice, add the roasted sweet potatoes, and top with the sliced chicken. Garnish with fresh herbs if desired.
Notes
For a vegetarian option, substitute chicken with tofu and seasonal veggies for sweet potatoes.
