- 1 can of white beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1 cup Greek yogurt or sour cream (for creaminess)
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- In a large pot, heat over medium heat and sauté the diced onion and minced garlic until they become translucent.
- Add in the shredded chicken, rinsed white beans, corn, cumin, chili powder, and chicken broth.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
- Stir in the Greek yogurt or sour cream until everything is creamy and well-combined.
- Season with salt and pepper to taste.
- Garnish with chopped cilantro before serving.
