- 8 oz pasta (penne or fusilli)
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1/2 red onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- In a large mixing bowl, combine zucchini, bell pepper, cherry tomatoes, spinach, red onion, garlic, oregano, basil, olive oil, salt, and pepper.
- Add the cooked pasta to the vegetable mixture and stir to combine thoroughly.
- Transfer the mixture to a baking dish, spreading it evenly.
- Top it off with mozzarella and parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
