  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 red onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente, then drain and set aside.
  3. In a large mixing bowl, combine zucchini, bell pepper, cherry tomatoes, spinach, red onion, garlic, oregano, basil, olive oil, salt, and pepper.
  4. Add the cooked pasta to the vegetable mixture and stir to combine thoroughly.
  5. Transfer the mixture to a baking dish, spreading it evenly.
  6. Top it off with mozzarella and parmesan cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
