Instructions
- Blend Ingredients: In a blender, combine the rolled oats, ripe banana, applesauce, eggs, cinnamon, baking powder, vanilla extract, and a pinch of salt. Blend until the batter is smooth and well combined.
- Heat the Skillet: Warm a non-stick skillet over medium heat and add a small amount of cooking oil or butter.
- Pour the Batter: For each pancake, pour about 1/4 cup of the batter into the skillet.
- Cook the Pancakes: Allow pancakes to cook for about 2-3 minutes or until bubbles start to form on the surface. Flip them and cook for another 2-3 minutes until they turn a lovely golden brown.
- Serve Warm: Remove from the skillet and serve immediately with your favorite toppings like maple syrup, fresh fruit, or a dollop of yogurt.
Notes
Leftover pancakes can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the toaster or microwave.
