Healthy Zucchini Fritters

Description

Delightful and nutritious zucchini fritters that are crispy on the outside and soft on the inside, perfect as a side dish for any meal.


Ingredients

  • 2 medium zucchinis, grated
  • 2 large eggs
  • 1/4 cup oat flour (or almond flour for a low-carb option)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup plain Greek yogurt or cottage cheese
  • 1 garlic clove, finely minced
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano or thyme
  • 2 tbsp chopped fresh parsley or dill
  • 1 tbsp olive oil or olive oil spray for pan-frying

Instructions

  1. Grate the zucchinis and place them in a clean dish towel. Squeeze out as much moisture as possible.
  2. Combine the grated zucchini with eggs, flour, Parmesan, Greek yogurt, minced garlic, sea salt, black pepper, oregano or thyme, and chopped herbs in a mixing bowl. Stir until a batter forms.
  3. Heat a non-stick skillet over medium heat and add a small amount of oil.
  4. Drop about 1/4 cup of batter for each fritter onto the skillet and flatten it slightly with the back of a spatula.
  5. Cook for approximately 3-4 minutes per side or until golden brown and cooked through.
  6. Drain any excess oil by placing the fritters on paper towels and serve warm.

Notes

Serve with Greek yogurt or tzatziki for added flavor. These fritters can also be customized with your favorite herbs and spices.
