  • Brownie Batter:
  • 1 cup all-purpose flour (or gluten-free blend)
  • 3/4 cup Dutch-process cocoa powder, sifted
  • 1/4 teaspoon salt
  • 3/4 + 2 tablespoons refined coconut oil or neutral oil
  • 1 1/2 cups granulated sugar
  • 1 tablespoon vanilla extract
  • 3 large eggs, room temperature

Instructions

  1. Make the raspberry sauce: In a medium saucepan, combine raspberries, sugar, and vanilla. Simmer over medium heat for 5–8 minutes until thickened, then strain and set aside.
  2. Prepare the cheesecake mixture: Beat cream cheese and granulated sugar until smooth, then add the egg and vanilla.
  3. Mix dry ingredients: In a separate bowl, whisk together flour, cocoa, and salt.
  4. Combine wet ingredients: In another bowl, mix oil, sugar, and vanilla, then beat in eggs one at a time.
  5. Combine all mixtures: Stir the dry and wet ingredients until just blended.
  6. Assemble the brownies: Pour brownie batter into a lined baking pan, top with cheesecake mixture, and swirl in raspberry sauce.
  7. Bake: Preheat the oven to 350°F and bake for 30–35 minutes. Let cool completely and chill for 2 hours.
  8. Cut into heart shapes and serve.

Notes
