Instructions
- Prepare Dry Mix: Sift the powdered sugar and almond flour into a bowl to eliminate lumps. Set aside.
- Beat Egg Whites: In a clean bowl, whisk egg whites on low speed until frothy. Gradually add granulated sugar and then increase to medium-high speed until stiff peaks form.
- Combine Ingredients: Gently fold the sifted almond flour and powdered sugar mixture into the whipped egg whites. Add a few drops of food coloring if desired, folding until the mixture flows like thick lava.
- Pipe Macarons: Transfer the batter into a piping bag with a round tip and pipe heart shapes on a baking sheet lined with parchment paper. Aim for uniform sizes.
- Rest: Allow macarons to rest at room temperature for 30 minutes to 1 hour, forming a dry skin.
- Bake: Preheat oven to 300°F (150°C) and bake the macarons for 18-20 minutes. They should be firm and lift easily from the parchment paper.
- Prepare Buttercream Filling: Beat softened butter until creamy, then gradually mix in powdered sugar. Add vanilla extract and salt. Mix in heavy cream or milk for desired consistency. Add red food coloring if desired.
- Assemble: After the shells cool, flip them over and pipe buttercream onto the flat side of one shell, sandwiching it with another.
- Chill: For the best flavor and texture, refrigerate the assembled macarons for at least 24 hours.
