- 1 cup rolled oats
- 1/2 cup protein powder (choose your favorite flavor)
- 1/2 cup maple syrup or honey
- 1 cup unsweetened apple sauce
- 1/2 cup almond milk (or any milk of choice)
- 1 cup fresh or frozen blueberries
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin.
- In a large bowl, mix dry ingredients: whole wheat flour, rolled oats, protein powder, baking powder, baking soda, salt, and optional cinnamon.
- In another bowl, whisk together wet ingredients: maple syrup, apple sauce, almond milk, and vanilla extract.
- Combine the wet and dry mixtures until just combined, then gently fold in the blueberries.
- Distribute the batter among muffin cups.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack.
