  • 1/2 cup maple syrup or honey
  • 1 cup unsweetened apple sauce
  • 1/2 cup almond milk (or any milk of choice)
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. In a large bowl, mix dry ingredients: whole wheat flour, rolled oats, protein powder, baking powder, baking soda, salt, and optional cinnamon.
  3. In another bowl, whisk together wet ingredients: maple syrup, apple sauce, almond milk, and vanilla extract.
  4. Combine the wet and dry mixtures until just combined, then gently fold in the blueberries.
  5. Distribute the batter among muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Cool in the tin for a few minutes before transferring to a wire rack.
