Instructions
- Heat a large pot over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
- Toss in the chopped onion and minced garlic, sautéing until soft and fragrant, roughly 3-4 minutes.
- Stir the diced potatoes into the pot and pour in the chicken broth. Bring to a boil.
- Once boiling, reduce the heat and let it simmer until the potatoes are tender, approximately 15-20 minutes.
- Lower the heat, then stir in the heavy cream. Season with salt and pepper to your liking.
- Serve warm, garnished with fresh parsley.
