This comforting casserole transforms a rotisserie chicken into a warm, flavorful dish perfect for family dinners.

- 1 rotisserie chicken, shredded
- 1 box stuffing mix (any flavor works)
- 1 cup chicken broth
- 1 cup cream of chicken soup
- 1 cup mixed vegetables (like peas, carrots, and corn)
- 1 cup shredded cheese (cheddar or your preferred cheese)
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the stuffing mix with the chicken broth and cream of chicken soup. Stir until well blended.
- Fold in the shredded rotisserie chicken, mixed vegetables, diced onion, minced garlic, salt, and pepper. Mix until everything is evenly coated.
- Spoon the mixture into a greased baking dish, spreading it out evenly.
- Generously sprinkle shredded cheese over the top of the mixture.
- Place in the oven and bake for 25-30 minutes, or until heated through and the cheese is bubbly and golden.
- Once it’s out of the oven, let it cool slightly before serving.
Notes
Feel free to substitute the mixed vegetables with any you prefer. This casserole is excellent for leftovers.
