This comforting casserole transforms a rotisserie chicken into a warm, flavorful dish perfect for family dinners.


Ingredients

  • 1 rotisserie chicken, shredded
  • 1 box stuffing mix (any flavor works)
  • 1 cup chicken broth
  • 1 cup cream of chicken soup
  • 1 cup mixed vegetables (like peas, carrots, and corn)
  • 1 cup shredded cheese (cheddar or your preferred cheese)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the stuffing mix with the chicken broth and cream of chicken soup. Stir until well blended.
  3. Fold in the shredded rotisserie chicken, mixed vegetables, diced onion, minced garlic, salt, and pepper. Mix until everything is evenly coated.
  4. Spoon the mixture into a greased baking dish, spreading it out evenly.
  5. Generously sprinkle shredded cheese over the top of the mixture.
  6. Place in the oven and bake for 25-30 minutes, or until heated through and the cheese is bubbly and golden.
  7. Once it’s out of the oven, let it cool slightly before serving.

Notes

Feel free to substitute the mixed vegetables with any you prefer. This casserole is excellent for leftovers.
