Ingredients

- 2 cups warm water
- 1 tablespoon sugar
- 2 teaspoons active dry yeast
- 5 cups all-purpose flour
- 1 tablespoon salt
- 1/4 cup olive oil
- Fresh herbs (like rosemary, thyme, or basil)
- Sea salt for topping
Instructions
- Combine warm water, sugar, and yeast in a bowl and let sit for 5-10 minutes until frothy.
- Mix flour and salt in a large bowl, create a well, and incorporate the yeast mixture and olive oil.
- Mix until a dough forms, then knead for 5-7 minutes on a floured surface until smooth and elastic.
- Transfer the dough to a greased bowl, cover with a cloth, and let rise in a warm place for about an hour until doubled in size.
- Preheat the oven to 425°F (220°C).
- Punch down the risen dough, transfer to a greased baking sheet, and press into a rectangle, dimpling the surface with fingers.
- Top with fresh herbs and sprinkle with sea salt.
- Bake for 20-25 minutes until golden brown.
- Allow to cool slightly, then serve warm.
Notes
Serve warm with olive oil for dipping. Store at room temperature in a paper bag for up to two days or wrapped in plastic for up to a week.
