Description

Ingredients

  • 2 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons active dry yeast
  • 5 cups all-purpose flour
  • 1 tablespoon salt
  • 1/4 cup olive oil
  • Fresh herbs (like rosemary, thyme, or basil)
  • Sea salt for topping

Instructions

  1. Combine warm water, sugar, and yeast in a bowl and let sit for 5-10 minutes until frothy.
  2. Mix flour and salt in a large bowl, create a well, and incorporate the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead for 5-7 minutes on a floured surface until smooth and elastic.
  4. Transfer the dough to a greased bowl, cover with a cloth, and let rise in a warm place for about an hour until doubled in size.
  5. Preheat the oven to 425°F (220°C).
  6. Punch down the risen dough, transfer to a greased baking sheet, and press into a rectangle, dimpling the surface with fingers.
  7. Top with fresh herbs and sprinkle with sea salt.
  8. Bake for 20-25 minutes until golden brown.
  9. Allow to cool slightly, then serve warm.

Notes

Serve warm with olive oil for dipping. Store at room temperature in a paper bag for up to two days or wrapped in plastic for up to a week.
