Description

A quick and flavor-packed quesadilla loaded with chicken, Greek yogurt, and ranch seasoning, perfect for busy weeknights.


Ingredients

  • 1 low-carb tortilla
  • 1 cup cooked chicken breast, shredded or diced
  • 1/4 cup Greek yogurt
  • 1 Laughing Cow cheese wedge
  • 1 tbsp ranch seasoning
  • Cooking spray or oil
  • Optional toppings: salsa, avocado, fresh veggies

Instructions

  1. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or oil.
  2. Spread Greek yogurt on one side of the low-carb tortilla.
  3. Layer cooked chicken, Laughing Cow cheese, and ranch seasoning on top of the yogurt.
  4. Fold the tortilla in half and place it in the skillet.
  5. Cook for 3-5 minutes on each side, until golden brown and cheese is melted.
  6. Remove from skillet, slice, and serve with optional toppings.

Notes

You can use rotisserie chicken for a quicker option or experiment with different low-carb tortillas.
