- 8 oz fettuccine pasta
- 1 lb lean ground beef
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a pot of salted boiling water, cook the fettuccine according to the package instructions until al dente. Drain, reserving 1 cup of pasta water.
- In a large skillet over medium heat, add the lean ground beef. Break it into small pieces and season it with salt and pepper. Cook until completely browned.
- Push the cooked beef to one side of the skillet. Add the minced garlic to the other side and sauté for about one minute until fragrant.
- Pour in the heavy cream and gradually stir in the Parmesan cheese. Mix continuously until the sauce is smooth and creamy.
- Toss in the fresh spinach, allowing it to wilt while scraping any flavorful bits from the pan.
- Add the drained fettuccine to the skillet, mixing it with the creamy beef sauce. If needed, add reserved pasta water to reach desired consistency. Serve hot and enjoy!
Notes
For variations, swap the fettuccine with whole grain or gluten-free pasta. This meal stores well for meal prep.
