- 8 oz penne pasta
- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes (with juices)
- 1 cup low-sodium beef broth
- 1/2 cup plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Olive oil (for cooking)
Instructions
- Cook the penne pasta according to package instructions. Drain and set it aside.
- In a large skillet, heat a splash of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add in the ground beef and cook until it’s nicely browned.
- Stir in the diced tomatoes (with juices), low-sodium beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, and season with salt and pepper. Let it simmer for a few minutes until heated through and slightly thickened.
- Toss the cooked penne pasta into the skillet with the beef mixture. Stir until everything is well-combined and warmed through.
- Serve immediately with a garnish of fresh basil or parsley for that finishing touch.
Notes
For a lighter option, substitute lean ground turkey. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to three months.
