  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Olive oil (for cooking)

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set it aside.
  2. In a large skillet, heat a splash of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Add in the ground beef and cook until it’s nicely browned.
  4. Stir in the diced tomatoes (with juices), low-sodium beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, and season with salt and pepper. Let it simmer for a few minutes until heated through and slightly thickened.
  5. Toss the cooked penne pasta into the skillet with the beef mixture. Stir until everything is well-combined and warmed through.
  6. Serve immediately with a garnish of fresh basil or parsley for that finishing touch.

Notes

For a lighter option, substitute lean ground turkey. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to three months.
