High Protein Creamy Beef Pasta

Description

A warm, creamy pasta dish that’s high in protein and perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 12 oz pasta (rigatoni or penne)
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 3/4 cup milk or broth (your choice)
  • 1/2 cup Greek yogurt or cream cheese
  • 1/3 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in a pot of salted water until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and minced garlic, browning while seasoning with salt and pepper.
  3. Stir in tomato paste and cook for about a minute.
  4. Gradually pour in milk or broth and bring to a simmer.
  5. Once bubbly, stir in Greek yogurt or cream cheese until creamy.
  6. Toss in drained pasta, adding reserved pasta water as needed for consistency.
  7. Fold in grated Parmesan cheese, garnish with parsley, and serve hot.

Notes

For a lighter version, swap cream cheese for Greek yogurt. You can also use turkey or chicken for a leaner meal.
