Ingredients

- 1 cup egg whites
- 1/2 cup spinach, chopped
- 1/2 cup bell peppers, diced
- 1/4 cup low-fat cottage cheese
- Salt and pepper to taste
- Optional: Shredded cheese or herbs
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the egg whites, chopped spinach, diced bell peppers, cottage cheese, salt, and pepper. Mix well.
- Spray a muffin tin with cooking spray or line with silicone cups.
- Pour the egg mixture into the muffin tin cups, filling them about three-quarters full.
- Bake for 18-20 minutes or until set and slightly golden.
- Cool for a few minutes before removing from the tin.
Notes
For the fluffiest texture, beat egg whites thoroughly before adding other ingredients. Experiment with different herbs and spices to customize flavors.
