Delicious and nutritious egg white bites packed with protein, perfect for a healthy snack or meal.


Ingredients

  • 1 cup egg whites
  • 1/2 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/4 cup low-fat cottage cheese
  • Salt and pepper to taste
  • Optional: Shredded cheese or herbs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the egg whites, chopped spinach, diced bell peppers, cottage cheese, salt, and pepper. Mix well.
  3. Spray a muffin tin with cooking spray or line with silicone cups.
  4. Pour the egg mixture into the muffin tin cups, filling them about three-quarters full.
  5. Bake for 18-20 minutes or until set and slightly golden.
  6. Cool for a few minutes before removing from the tin.

Notes

For the fluffiest texture, beat egg whites thoroughly before adding other ingredients. Experiment with different herbs and spices to customize flavors.
