A nostalgic homemade butterscotch pudding that is rich, creamy, and perfect for any occasion.
Ingredients

- 2 cups of milk
- 1 tablespoon of butter
- 5 tablespoons of dark brown sugar
- 1/4 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- 3 tablespoons of cornstarch
Instructions
- In a medium-sized saucepan, combine the milk, butter, dark brown sugar, vanilla extract, and salt. Heat over medium heat until hot but not boiling.
- In a medium bowl, take half of the hot milk mixture and whisk in the cornstarch until fully dissolved.
- Pour the cornstarch mixture back into the saucepan and return to heat. Stir continuously until the pudding thickens and looks glossy, about 5 minutes on a simmer.
- Transfer the pudding into a serving bowl, cool to room temperature, then cover and refrigerate until cold.
Notes
For an ultra-smooth pudding, whisk vigorously to prevent clumps. If too thick after chilling, whisk in a splash of milk.
