Description

A nostalgic homemade butterscotch pudding that is rich, creamy, and perfect for any occasion.


Ingredients

  • 2 cups of milk
  • 1 tablespoon of butter
  • 5 tablespoons of dark brown sugar
  • 1/4 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 3 tablespoons of cornstarch

Instructions

  1. In a medium-sized saucepan, combine the milk, butter, dark brown sugar, vanilla extract, and salt. Heat over medium heat until hot but not boiling.
  2. In a medium bowl, take half of the hot milk mixture and whisk in the cornstarch until fully dissolved.
  3. Pour the cornstarch mixture back into the saucepan and return to heat. Stir continuously until the pudding thickens and looks glossy, about 5 minutes on a simmer.
  4. Transfer the pudding into a serving bowl, cool to room temperature, then cover and refrigerate until cold.

Notes

For an ultra-smooth pudding, whisk vigorously to prevent clumps. If too thick after chilling, whisk in a splash of milk.
