Ingredients

  • 2 chicken breasts, poached and shredded
  • 4 cups chicken broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup green beans, trimmed and chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat a drizzle of oil over medium heat. Add the diced onions, carrots, celery, and minced garlic. Sauté until the vegetables are tender and fragrant, about 5-7 minutes.
  2. Pour in the chicken broth and bring the mixture to a boil.
  3. Stir in the shredded chicken, green beans, thyme, rosemary, salt, and pepper. Mix well.
  4. Lower the heat and let it simmer for 15-20 minutes, or until the vegetables are cooked through.
  5. Serve hot, garnished with freshly chopped parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months.
