Ingredients

- 2 chicken breasts, poached and shredded
- 4 cups chicken broth
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup green beans, trimmed and chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat a drizzle of oil over medium heat. Add the diced onions, carrots, celery, and minced garlic. Sauté until the vegetables are tender and fragrant, about 5-7 minutes.
- Pour in the chicken broth and bring the mixture to a boil.
- Stir in the shredded chicken, green beans, thyme, rosemary, salt, and pepper. Mix well.
- Lower the heat and let it simmer for 15-20 minutes, or until the vegetables are cooked through.
- Serve hot, garnished with freshly chopped parsley.

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months.
