Ingredients

  • 2/3 cup white granulated sugar (130g)
  • 1/4 cup unsweetened cocoa powder (25g)
  • 3 tablespoons cornstarch (22g)
  • 1/4 teaspoon salt (1g)
  • 2 1/4 cups milk (whole, 2%, or 1%) (562 ml)
  • 2 tablespoons butter (28g)
  • 1 teaspoon vanilla extract (5ml)

Instructions

  1. In a medium pot, whisk together the sugar, cocoa powder, cornstarch, and salt.
  2. Gradually pour in the milk, a third at a time, whisking continuously until fully incorporated.
  3. Place the pot over medium heat. Stir frequently until the mixture begins to bubble.
  4. Once bubbling, continue stirring and boil for one minute. Then remove from heat.
  5. Stir in the butter and vanilla extract until completely blended.
  6. Allow the pudding to cool for a few minutes before scooping into individual bowls.
  7. Serve it warm, or cover with plastic wrap and chill in the fridge for a few hours.

Notes

For a richer flavor, consider adding a pinch of espresso powder along with the cocoa.
