- 2/3 cup white granulated sugar (130g)
- 1/4 cup unsweetened cocoa powder (25g)
- 3 tablespoons cornstarch (22g)
- 1/4 teaspoon salt (1g)
- 2 1/4 cups milk (whole, 2%, or 1%) (562 ml)
- 2 tablespoons butter (28g)
- 1 teaspoon vanilla extract (5ml)
Instructions
- In a medium pot, whisk together the sugar, cocoa powder, cornstarch, and salt.
- Gradually pour in the milk, a third at a time, whisking continuously until fully incorporated.
- Place the pot over medium heat. Stir frequently until the mixture begins to bubble.
- Once bubbling, continue stirring and boil for one minute. Then remove from heat.
- Stir in the butter and vanilla extract until completely blended.
- Allow the pudding to cool for a few minutes before scooping into individual bowls.
- Serve it warm, or cover with plastic wrap and chill in the fridge for a few hours.
Notes
For a richer flavor, consider adding a pinch of espresso powder along with the cocoa.
