Homemade Everything Bagels

  • Total Time: 142 minutes
  • Yield: 10 bagels 1x
  • Diet: Vegetarian

Description

Delightful New York-style bagels with a chewy texture and topped with a flavorful everything seasoning, perfect for breakfast or brunch.

Ingredients

Scale
  • 4 ⅔ cups bread flour
  • 3 tablespoons granulated sugar (divided)
  • 2 teaspoons instant yeast
  • 2 teaspoons kosher salt
  • 1 ⅔ cup warm water
  • 1 egg white + 1 tablespoon water (for the egg wash)
  • 3 tablespoons everything bagel seasoning

Instructions

  1. In the bowl of a stand mixer fitted with the dough hook, combine the flour, 1 tablespoon of granulated sugar, instant yeast, and kosher salt.
  2. With the mixer on low speed, gradually add in the warm water. Mix until a shaggy dough forms.
  3. Transfer the dough to a smooth work surface and knead for about 3-4 minutes until a soft, smooth dough forms. Add flour or water as needed to ensure the dough is not sticky.
  4. Place the dough in a greased bowl and cover with plastic wrap. Let it rise for 60-90 minutes, or until doubled in size.
  5. After the rise, transfer the dough to a work surface and divide it into 10 equal pieces. Roll each piece into a ball, pressing your thumb through the center to form a bagel.
  6. Cover the bagels with a clean kitchen towel and let rest for 20 minutes.
  7. Preheat your oven to 425°F and prepare two baking sheets lined with parchment paper. Boil 2 quarts of water with 2 tablespoons of granulated sugar in a large pot.
  8. Boil the bagels for 45-60 seconds on each side. Ensure they float before removing them with a slotted spoon.
  9. Transfer the bagels to the prepared baking sheets, reshaping if needed.
  10. Whisk together the egg white and water, then brush over the bagels. Sprinkle with everything bagel seasoning.
  11. Bake for 20-22 minutes, rotating halfway through for even browning. Let them cool fully before slicing.

Notes

Let bagels cool completely before storing. They can be stored in a resealable plastic bag at room temperature for up to 2 days or sliced and frozen for longer storage.
