- 4 ⅔ cups bread flour
- 3 tablespoons granulated sugar (divided)
- 2 teaspoons instant yeast
- 2 teaspoons kosher salt
- 1 ⅔ cup warm water
- 1 egg white + 1 tablespoon water (for the egg wash)
- 3 tablespoons everything bagel seasoning
Instructions
- In the bowl of a stand mixer fitted with the dough hook, combine the flour, 1 tablespoon of granulated sugar, instant yeast, and kosher salt.
- With the mixer on low speed, gradually add in the warm water. Mix until a shaggy dough forms.
- Transfer the dough to a smooth work surface and knead for about 3-4 minutes until a soft, smooth dough forms. Add flour or water as needed to ensure the dough is not sticky.
- Place the dough in a greased bowl and cover with plastic wrap. Let it rise for 60-90 minutes, or until doubled in size.
- After the rise, transfer the dough to a work surface and divide it into 10 equal pieces. Roll each piece into a ball, pressing your thumb through the center to form a bagel.
- Cover the bagels with a clean kitchen towel and let rest for 20 minutes.
- Preheat your oven to 425°F and prepare two baking sheets lined with parchment paper. Boil 2 quarts of water with 2 tablespoons of granulated sugar in a large pot.
- Boil the bagels for 45-60 seconds on each side. Ensure they float before removing them with a slotted spoon.
- Transfer the bagels to the prepared baking sheets, reshaping if needed.
- Whisk together the egg white and water, then brush over the bagels. Sprinkle with everything bagel seasoning.
- Bake for 20-22 minutes, rotating halfway through for even browning. Let them cool fully before slicing.
Notes
Let bagels cool completely before storing. They can be stored in a resealable plastic bag at room temperature for up to 2 days or sliced and frozen for longer storage.
