- 1 pound fresh green beans, trimmed
- 2 cups sliced mushrooms
- 1 onion, diced
- 2 cups heavy cream
- 2 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup fried shallots
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Blanch the green beans in boiling water for about 5 minutes, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened.
- Stir in the sliced mushrooms and cook until they release their moisture and turn golden brown.
- Pour in the heavy cream and bring the mixture to a gentle simmer.
- Add in the grated Parmesan cheese, seasoning with salt and pepper to taste.
- In a mixing bowl, combine the cooked green beans with the creamy mushroom sauce.
- Transfer this mixture to a greased baking dish.
- Top with crispy fried shallots.
- Bake in the preheated oven for 25-30 minutes until the top is bubbly and golden.
- Serve warm as a delicious side dish.
Notes
For extra flavor, add a splash of white wine while cooking the mushrooms or a pinch of crushed red pepper flakes for some heat. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
