Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 cup mushrooms, sliced (cremini or button)
  • ½ cup onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup vegetable broth
  • ½ cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 cup crispy fried shallots
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blanch the green beans in boiling salted water for about 5 minutes, then drain and set aside.
  3. In a skillet, melt butter over medium heat, and add chopped onions and minced garlic, cooking until translucent.
  4. Add sliced mushrooms to the skillet and cook until soft.
  5. Sprinkle flour over the mixture and stir. Gradually add vegetable broth and heavy cream, stirring until the sauce thickens. Season with salt and pepper.
  6. In a large bowl, combine blanched green beans, mushroom sauce, and half of the grated parmesan.
  7. Pour the mixture into a baking dish and top with remaining parmesan and crispy fried shallots.
  8. Bake for 25-30 minutes, until bubbly and golden on top. Serve warm.
