Description

A warm and creamy loaded potato soup topped with crispy bacon and fresh green onions, perfect for chilly evenings.


Ingredients

  • 4 large potatoes, peeled and chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • 3 green onions, sliced for garnish
  • Salt and pepper, to taste

Instructions

  1. Sauté the diced onion and minced garlic over medium heat until soft and fragrant, about 3-4 minutes.
  2. Add the chopped potatoes and pour in the chicken broth. Increase the heat to bring it to a boil.
  3. Once boiling, reduce the heat, cover, and let it simmer until the potatoes are tender, roughly 15-20 minutes.
  4. Using an immersion blender, blend the mixture until smooth.
  5. Stir in the heavy cream and shredded cheddar cheese until melted and well incorporated.
  6. Season with salt and pepper to taste.
  7. Serve hot, topping each bowl with crispy bacon and sliced green onions.

Notes

For a vegetarian version, swap chicken broth for vegetable broth and omit the bacon.
