Ingredients

- 4 large potatoes, peeled and chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- 6 slices bacon, cooked and crumbled
- 3 green onions, sliced for garnish
- Salt and pepper, to taste
Instructions
- Sauté the diced onion and minced garlic over medium heat until soft and fragrant, about 3-4 minutes.
- Add the chopped potatoes and pour in the chicken broth. Increase the heat to bring it to a boil.
- Once boiling, reduce the heat, cover, and let it simmer until the potatoes are tender, roughly 15-20 minutes.
- Using an immersion blender, blend the mixture until smooth.
- Stir in the heavy cream and shredded cheddar cheese until melted and well incorporated.
- Season with salt and pepper to taste.
- Serve hot, topping each bowl with crispy bacon and sliced green onions.
Notes
For a vegetarian version, swap chicken broth for vegetable broth and omit the bacon.
