Description

Delicious homemade oatmeal cream pies filled with a rich cream filling, perfect for any occasion.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 tablespoon molasses
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups quick oats
  • 3/4 cup unsalted butter, softened (for cream filling)
  • 2 ounces cream cheese, full-fat, brick style
  • 34 cups powdered sugar, to taste
  • 1 teaspoon vanilla extract (for cream filling)
  • 1/4 teaspoon salt (for cream filling)
  • 1 tablespoon cream (if needed for filling consistency)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add molasses and vanilla extract, mixing well. Then, incorporate the eggs one at a time until fully blended.
  4. Whisk together the flour, cinnamon, baking soda, and salt in a separate bowl. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Fold in the quick oats, ensuring even distribution throughout the dough.
  6. Drop rounded tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until lightly golden around the edges.
  7. Prepare the cream filling by beating the softened butter and cream cheese together until smooth. Gradually add the powdered sugar, continuing to mix until fluffy. Add vanilla extract and salt, adjusting with cream if needed.
  8. Spread a generous dollop of the cream filling on the flat side of one cookie and sandwich it with another cookie.

Notes

Consider pairing these oatmeal cream pies with a cold glass of milk or a scoop of vanilla ice cream for added enjoyment.
