- 2 Carrots, diced
- 2 Stalks of Celery, diced
- 1 Onion, diced
- 2 Cloves of Garlic, minced (optional)
- 6 cups Chicken broth
- 8 oz Egg noodles
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
- Fresh herbs like parsley or thyme (optional, for garnish)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onions, carrots, and celery. Sauté for about 5 minutes, until they soften.
- If using, stir in minced garlic and cook for an additional minute.
- Place the chicken breasts or thighs into the pot, then pour in the chicken broth.
- Add salt, pepper, and any additional spices you love.
- Bring to a boil, then reduce heat and let it simmer for about 15 minutes, until the chicken is cooked through.
- Remove the chicken, shred it with two forks, and return it to the pot.
- Stir in the egg noodles and cook for another 8-10 minutes until they’re tender.
- Finally, sprinkle fresh herbs on top and serve hot.
Notes
You can use rotisserie chicken for a quicker option. For a vegetarian version, opt for vegetable broth and tofu.
