Ingredients

  • 6 cups Chicken broth
  • 8 oz Egg noodles
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs like parsley or thyme (optional, for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onions, carrots, and celery. Sauté for about 5 minutes, until they soften.
  3. If using, stir in minced garlic and cook for an additional minute.
  4. Place the chicken breasts or thighs into the pot, then pour in the chicken broth.
  5. Add salt, pepper, and any additional spices you love.
  6. Bring to a boil, then reduce heat and let it simmer for about 15 minutes, until the chicken is cooked through.
  7. Remove the chicken, shred it with two forks, and return it to the pot.
  8. Stir in the egg noodles and cook for another 8-10 minutes until they’re tender.
  9. Finally, sprinkle fresh herbs on top and serve hot.

Notes

You can use rotisserie chicken for a quicker option. For a vegetarian version, opt for vegetable broth and tofu.
