Description

A comforting and flavorful one-pan meal of tender chicken, sticky BBQ sauce, and perfectly cooked rice—ready in just 30 minutes!


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup mixed vegetables (fresh or frozen)
  • Chopped green onions or parsley for garnish

Instructions

  1. Heat a large skillet or deep pan over medium heat. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Add a drizzle of oil to the hot pan and sear the chicken for 3-4 minutes on each side until golden brown. Remove the chicken and set aside.
  3. In the same pan, add the uncooked rice and toast it for about 1-2 minutes, stirring frequently to avoid burning.
  4. Pour in the chicken broth, then add the BBQ sauce and honey, stirring to combine.
  5. Carefully return the seared chicken to the pan, nestling it into the rice mixture.
  6. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for 15 minutes.
  7. After 15 minutes, sprinkle the mixed vegetables over the rice. Cover again and continue cooking for an additional 5 minutes, or until the rice is tender and the chicken reaches an internal temperature of 165°F (74°C).
  8. Remove the pan from heat and let it rest for 5 minutes before fluffing the rice with a fork.
  9. Garnish with chopped green onions or parsley, and serve hot!

Notes

This dish can be easily customized by swapping chicken for tofu or varying the mixed vegetables. It can also be frozen for up to 2 months.
