A delightful one-pot meal that combines tender chicken thighs with fluffy rice and a tangy-sweet honey BBQ sauce, perfect for busy weeknights.

- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper. Let them sit for about 10 minutes.
- Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown. Remove chicken and set aside.
- In a bowl, mix the BBQ sauce, honey, and any additional flavor ingredients.
- In the same pan, toast the rice for 1–2 minutes, stirring frequently.
- Pour in the chicken broth and add half of the prepared sauce. Stir well.
- Return the seared chicken to the pan and pour the remaining sauce on top.
- Cover and lower the heat to simmer for 15 minutes.
- If using mixed vegetables, add them in, cover again, and cook for an additional 5 minutes.
- Let sit for 5 minutes before serving. Garnish with chopped green onions.
Notes
For added flavor, marinate the chicken in the BBQ sauce mixture for a couple of hours before cooking. Experiment with different rice types for varied flavors.
