Description

A delightful one-pot meal that combines tender chicken thighs with fluffy rice and a tangy-sweet honey BBQ sauce, perfect for busy weeknights.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper. Let them sit for about 10 minutes.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown. Remove chicken and set aside.
  3. In a bowl, mix the BBQ sauce, honey, and any additional flavor ingredients.
  4. In the same pan, toast the rice for 1–2 minutes, stirring frequently.
  5. Pour in the chicken broth and add half of the prepared sauce. Stir well.
  6. Return the seared chicken to the pan and pour the remaining sauce on top.
  7. Cover and lower the heat to simmer for 15 minutes.
  8. If using mixed vegetables, add them in, cover again, and cook for an additional 5 minutes.
  9. Let sit for 5 minutes before serving. Garnish with chopped green onions.

Notes

For added flavor, marinate the chicken in the BBQ sauce mixture for a couple of hours before cooking. Experiment with different rice types for varied flavors.
