Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound of green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Whisk together honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper in a small bowl until well combined.
  2. Marinate the chicken breasts in this mixture for at least 30 minutes, or up to 8 hours in the refrigerator for deeper flavor.
  3. Preheat the oven to 400°F (200°C).
  4. Spread the cubed sweet potatoes on a lined baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
  5. Roast sweet potatoes in the oven for about 15 minutes, just until they start to soften.
  6. Remove the baking sheet from the oven. Push the sweet potatoes to one side and place the marinated chicken on the other side. Arrange the green beans around the chicken.
  7. Drizzle the remaining marinade over the chicken and vegetables.
  8. Bake for an additional 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender.

Notes

For best flavor, marinate chicken for 8 hours. Leftovers can be refrigerated for up to 4 days.
