- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cubed
- 1 pound of green beans, trimmed
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Whisk together honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper in a small bowl until well combined.
- Marinate the chicken breasts in this mixture for at least 30 minutes, or up to 8 hours in the refrigerator for deeper flavor.
- Preheat the oven to 400°F (200°C).
- Spread the cubed sweet potatoes on a lined baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
- Roast sweet potatoes in the oven for about 15 minutes, just until they start to soften.
- Remove the baking sheet from the oven. Push the sweet potatoes to one side and place the marinated chicken on the other side. Arrange the green beans around the chicken.
- Drizzle the remaining marinade over the chicken and vegetables.
- Bake for an additional 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender.
Notes
For best flavor, marinate chicken for 8 hours. Leftovers can be refrigerated for up to 4 days.
