- 14 ounces chicken or turkey sausage, sliced into 1/2-inch rounds
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 2 cups broccoli florets, cut into 1/2-inch pieces
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 1 tablespoon apple cider vinegar
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons fresh parsley, finely minced
Instructions
- Preheat your oven to 400°F. Line a sheet pan with parchment paper or lightly coat it with nonstick spray.
- Arrange the sliced sausage, diced sweet potatoes, and broccoli florets in an even layer on the prepared sheet pan.
- In a small saucepan over medium heat, melt the butter and sauté the minced garlic for about a minute until fragrant.
- Stir in honey, low-sodium soy sauce, apple cider vinegar, salt, and black pepper. Let simmer for 2–3 minutes, stirring occasionally.
- Pour the honey garlic glaze evenly over the ingredients on the sheet pan and toss until well coated.
- Roast in the oven for 25–30 minutes, stirring once halfway through to ensure even cooking.
- Once done, the sweet potatoes should be fork-tender, and the sausage nicely browned. Remove from the oven and sprinkle with minced parsley before serving.
Notes
For a spicy kick, consider adding red pepper flakes to the glaze. Ensure even cooking by cutting veggies into similar sizes.
