  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced carrots and trimmed green beans.
  3. Drizzle the olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper over the vegetables. Toss until everything is evenly coated.
  4. Arrange the vegetables in a single layer on a baking sheet.
  5. Roast in the oven for 20-25 minutes, stirring halfway through for even caramelization.
  6. When the carrots are tender and slightly caramelized and the green beans are tender-crisp, remove them from the oven.
  7. Transfer to a serving dish and garnish with the chopped parsley.
