- 1 pound carrots, peeled and sliced
- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 1/4 cup honey
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced carrots and trimmed green beans.
- Drizzle the olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper over the vegetables. Toss until everything is evenly coated.
- Arrange the vegetables in a single layer on a baking sheet.
- Roast in the oven for 20-25 minutes, stirring halfway through for even caramelization.
- When the carrots are tender and slightly caramelized and the green beans are tender-crisp, remove them from the oven.
- Transfer to a serving dish and garnish with the chopped parsley.

Notes
Feel free to substitute honey with maple syrup or use fresh herbs instead of parsley for a different twist.
