- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 1/4 cup honey
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon

- Salt and pepper, to taste
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sliced carrots and trimmed green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until coated.
- Arrange the seasoned vegetables in a single layer on a baking sheet.
- Place the baking sheet in the oven and roast for 20-25 minutes, stirring halfway through.
- Remove from the oven, transfer to a serving dish, and garnish with chopped fresh parsley.
Notes
For best results, ensure your carrots are cut uniformly for even cooking. You can substitute honey with maple syrup and green beans with snap peas.
