- 2 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- Salt and freshly ground black pepper to taste
- Optional: Chopped fresh parsley or toasted sesame seeds for garnish
Instructions
- Preheat your oven to 400°F (200°C). Wash and trim the green beans, removing the stem ends. Peel the carrots if using whole ones, cutting them into 1-inch pieces.
- In a small bowl, whisk together olive oil, honey, balsamic vinegar, minced garlic, dried thyme, salt, and pepper until emulsified.
- In a large bowl, toss the prepared carrots and green beans with the glaze, ensuring all pieces are evenly coated.
- Spread the glazed veggies in a single layer on a baking sheet and roast for 20-25 minutes. Check for doneness at 20 minutes.
- For extra sweetness, broil the vegetables for the last 1-2 minutes, keeping a close watch to prevent burning.
- Let the roasted vegetables rest for a couple of minutes, then garnish as desired before serving hot.
Notes
Leftovers can be stored in an airtight container in the refrigerator for about 3 to 5 days. Consider reheating in the oven for best quality.
