- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 1 cup rice (white or brown)
- 2 cups chicken broth
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- In a bowl, combine honey and Dijon mustard until well mixed to create the glaze.
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat. Add chicken breasts and cook for about 6-7 minutes on each side until golden and cooked through.
- Pour the honey-mustard mixture over the chicken and let it simmer for a few minutes until slightly thickened.
- While the chicken simmers, cook the rice in a pot using chicken broth instead of water, following package instructions.
- Plate the chicken over the cooked rice and garnish with chopped parsley if desired.
Notes
For an extra flavor boost, consider marinating the chicken in the honey mustard mixture for a few hours before cooking.
