Ingredients

  • 2 chicken breasts
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. In a bowl, combine honey and Dijon mustard until well mixed to create the glaze.
  2. Season the chicken breasts with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Add chicken breasts and cook for about 6-7 minutes on each side until golden and cooked through.
  4. Pour the honey-mustard mixture over the chicken and let it simmer for a few minutes until slightly thickened.
  5. While the chicken simmers, cook the rice in a pot using chicken broth instead of water, following package instructions.
  6. Plate the chicken over the cooked rice and garnish with chopped parsley if desired.

Notes

For an extra flavor boost, consider marinating the chicken in the honey mustard mixture for a few hours before cooking.
