Ingredients

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup chilled unsalted butter, cubed
- 3/4 cup buttermilk
- 1 pound boneless skinless chicken thighs
- 1 cup buttermilk (for marinating)
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- 1 cup hot honey sauce
- Oil for frying
Instructions
- Prepare the biscuit dough by mixing flour, baking powder, baking soda, and salt. Cut in cubed butter until crumbly, then stir in buttermilk.
- Knead and roll out the dough to about 1-inch thick and cut into biscuits.
- Bake at 425°F (220°C) for 15-20 minutes until golden brown.
- Marinate chicken thighs in buttermilk, paprika, garlic powder, and cayenne for at least 1 hour.
- Fry marinated chicken in hot oil until golden brown and cooked through.
- Assemble by placing fried chicken on biscuits and drizzling with hot honey sauce. Serve warm.
Notes
For a lighter option, substitute chicken breasts. You can also use regular milk with vinegar as a substitute for buttermilk.
