- 1/4 cup organic cornstarch

- 2 3/4 cups milk

Instructions
- In a medium-sized saucepan, combine the sugar, cocoa powder, cornstarch, and salt.
- Gradually stir in the milk over medium heat.
- Bring the mixture to a gentle boil, stirring constantly.
- Continue to cook until the pudding thickens enough to coat the back of a spoon.
- Remove from heat, and stir in the butter and vanilla until the butter is completely melted.
- Let the pudding cool slightly, and then cover and chill in the refrigerator until ready to serve.
Notes
For a vegan version, consider using non-dairy milk alternatives or substituting coconut oil for butter. Store leftovers in an airtight container in the refrigerator for up to 4 days.
