Ingredients

  • 1 kg chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 2 large onions, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 3 large tomatoes, pureed
  • 1/2 cup plain yogurt (Greek yogurt works well)
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • Salt, to taste
  • 1/2 cup fresh cilantro leaves, chopped
  • 3 tablespoons cream (optional)
  • Water, as needed

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add chopped onions and sauté until golden brown, about 5-7 minutes.
  3. Stir in ginger-garlic paste, cooking until fragrant (approximately 2 minutes).
  4. Pour in the pureed tomatoes and cook until the sauce thickens, letting the oil separate (about 5-10 minutes).
  5. Lower the heat and mix in the ground coriander, cumin, turmeric, red chili powder, and salt. Cook for another 2 minutes.
  6. Add chicken pieces, stirring well to coat each piece with the spice mixture. Cook for 5 minutes until slightly browned.
  7. Whisk the yogurt until smooth and add it to the pan, stirring continuously to prevent curdling. Cook for 10 minutes on medium heat.
  8. Pour in enough water to cover the chicken completely, bring to a boil, then reduce to a simmer. Cover and let it cook for 20-25 minutes until the chicken is tender.
  9. Stir in garam masala and cream (if using). Let it cook for an additional 5 minutes.
  10. Garnish with chopped cilantro before serving.

Notes

Serve hot with basmati rice or naan. For a vegetarian option, substitute chicken with tofu or chickpeas.
