- 1 kg chicken, cut into pieces
- 2 tablespoons vegetable oil
- 2 large onions, finely chopped
- 2 tablespoons ginger-garlic paste
- 3 large tomatoes, pureed
- 1/2 cup plain yogurt (Greek yogurt works well)
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt, to taste
- 1/2 cup fresh cilantro leaves, chopped
- 3 tablespoons cream (optional)
- Water, as needed
Instructions
- Heat vegetable oil in a large pan over medium heat.
- Add chopped onions and sauté until golden brown, about 5-7 minutes.
- Stir in ginger-garlic paste, cooking until fragrant (approximately 2 minutes).
- Pour in the pureed tomatoes and cook until the sauce thickens, letting the oil separate (about 5-10 minutes).
- Lower the heat and mix in the ground coriander, cumin, turmeric, red chili powder, and salt. Cook for another 2 minutes.
- Add chicken pieces, stirring well to coat each piece with the spice mixture. Cook for 5 minutes until slightly browned.
- Whisk the yogurt until smooth and add it to the pan, stirring continuously to prevent curdling. Cook for 10 minutes on medium heat.
- Pour in enough water to cover the chicken completely, bring to a boil, then reduce to a simmer. Cover and let it cook for 20-25 minutes until the chicken is tender.
- Stir in garam masala and cream (if using). Let it cook for an additional 5 minutes.
- Garnish with chopped cilantro before serving.
Notes
Serve hot with basmati rice or naan. For a vegetarian option, substitute chicken with tofu or chickpeas.
