Crispy phyllo pastry rolls filled with creamy feta cheese, fresh herbs, and drizzled with a spicy chili honey for a delightful appetizer.
Ingredients

- 8 oz Feta Cheese (or goat cheese)
- 2 tbsp Dill (fresh)
- 2 tbsp Mint (fresh, or basil)
- 1 tbsp Lemon Zest (from unwaxed lemons)
- 8 sheets Phyllo Pastry
- 4 tbsp Olive Oil
- 1/2 cup Honey (high-quality)
- 1 tbsp Chili Flakes
Instructions
- Preheat the oven to 375°F (190°C).
- Mix together feta cheese, dill, mint, and lemon zest in a bowl.
- Brush a sheet of phyllo pastry with olive oil, layer another sheet on top, and repeat to create a stack of four sheets.
- Spoon a portion of the feta mixture near one edge and roll it up tightly.
- Brush the tops of the rolls with olive oil and sprinkle with chili flakes.
- Bake for 20-25 minutes until golden brown and crispy.
- Warm honey in a saucepan, stir in chili flakes, and remove from heat.
- Drizzle spicy honey over the hot rolls before serving.
Notes
Serve fresh from the oven with a side salad or tzatziki for dipping. Store leftovers in an airtight container for 3-4 days; reheat in the oven for best results.
