Ingredients

  • 2 pounds stew meat
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 tablespoons corn starch (optional for thickening)
  • Mashed potatoes for serving

Instructions

  1. Set your Instant Pot to sauté mode and drizzle in the olive oil.
  2. Add the chopped onion and minced garlic; cook until softened, stirring occasionally.
  3. Toss in the stew meat and brown it on all sides for added flavor.
  4. Pour in the beef broth and Worcestershire sauce. Season with salt, pepper, and paprika.
  5. Close the lid, set the valve to sealing, and cook on high pressure for 35 minutes.
  6. Allow for a natural pressure release for 10 minutes, then release any remaining pressure.
  7. For a thicker gravy, mix corn starch with a little water and stir it into the pot. Use sauté mode to thicken.
  8. Serve hot over mashed potatoes.

Notes

For a spicier version, add cayenne or hot sauce. Fresh herbs can enhance the flavor remarkably.
