Description

A quick and flavorful one-pot dish with succulent chicken breasts in a creamy garlic Parmesan sauce, perfect for busy weeknights or gatherings.


Ingredients

  • 1.52 lbs Boneless, Skinless Chicken Breasts (about 34 medium breasts)
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Unsalted Butter
  • 810 Cloves Garlic, minced
  • 1 teaspoon Salt (adjust to taste)
  • 1/2 teaspoon Black Pepper, freshly ground
  • 1 teaspoon Italian Seasoning
  • 1/4 teaspoon Red Pepper Flakes (optional)
  • 1 cup Low-Sodium Chicken Broth
  • 1/2 cup Heavy Cream
  • 4 oz Cream Cheese, softened and cubed (optional)
  • 3/4 cup Grated Parmesan Cheese
  • 1 Tablespoon Cornstarch mixed with 2 Tablespoons Cold Water (slurry, optional)
  • 2 Tablespoons Fresh Parsley, chopped

Instructions

  1. Pat the chicken breasts dry and season with salt, pepper, Italian seasoning, and red pepper flakes.
  2. Set Instant Pot to the “Sauté” function. Add olive oil and butter, then sear the chicken for 2-3 minutes on each side until golden. Set chicken aside.
  3. Add minced garlic to the pot and sauté for 30-60 seconds until fragrant.
  4. Deglaze the pot with chicken broth, scraping the bottom to remove browned bits; turn off the Sauté function.
  5. Return the seared chicken into the broth, secure the lid, and cook on high pressure for 10-12 minutes.
  6. Let the pressure release naturally for 10 minutes, then perform a quick release for remaining pressure.
  7. Remove chicken, add cream cheese (if using), whisk until smooth, then stir in heavy cream and Parmesan until melted.
  8. If desired, thicken sauce with cornstarch slurry.
  9. Return chicken to the sauce or slice and toss to coat, then garnish with parsley.
  10. Serve with rice, mashed potatoes, or crusty bread.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Reheat gently to maintain creaminess.
