Ingredients

- 1 ½ cups grated raw potatoes
- 1 cup all-purpose flour
- 1 cup mashed potatoes
- 1 egg
- 1 tbsp milk
- Salt and pepper to taste
- ¼ cup olive oil
Instructions
- Prep the Potatoes: Grate the raw potatoes and squeeze out excess moisture using a kitchen towel.
- Mix Ingredients: In a large bowl, combine grated potatoes, flour, and mashed potatoes.
- Add Egg and Milk: Crack the egg into the mixture, add the milk along with salt and pepper, and stir until thick.
- Heat the Oil: Warm the olive oil in a skillet over medium heat.
- Fry the Pancakes: Drop spoonfuls of batter into the skillet, flatten slightly, and cook for 3–4 minutes on each side until golden brown.
Notes
Serve topped with crème fraîche or sour cream. Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
