- 2 pounds Russet potatoes, peeled and chopped
- 1 pound curly kale or cabbage
- 1 bunch green onions, chopped (green parts only)
- ½ cup butter, divided
- 1 cup whole milk or heavy cream
- 1 teaspoon salt
- ½ teaspoon ground white or black pepper
Instructions
- Boil the salted water in a large pot. Once boiling, add the chopped potatoes and cook for 15-20 minutes until fork-tender.
- Sauté the kale or cabbage in half of the melted butter until softened, or briefly boil in salted water for 3-5 minutes.
- Prepare a milk mixture by melting the remaining butter with the chopped green onions in a small saucepan, then gently add the milk or cream without boiling.
- Mash the drained potatoes until smooth.
- Combine the sautéed greens with the mashed potatoes, seasoning with salt and pepper, and gradually mix in the warm milk mixture until creamy.
- Serve hot, creating a well in the center for melted butter.
