Description

A heartwarming traditional Irish dish made with mashed potatoes and greens, perfect for any family gathering or cozy dinner.


Ingredients

  • 2 pounds Russet potatoes, peeled and chopped
  • 1 pound curly kale or cabbage
  • 1 bunch green onions, chopped (green parts only)
  • ½ cup butter, divided
  • 1 cup whole milk or heavy cream
  • 1 teaspoon salt
  • ½ teaspoon ground white or black pepper

Instructions

  1. Boil the salted water in a large pot. Once boiling, add the chopped potatoes and cook for 15-20 minutes until fork-tender.
  2. Sauté the kale or cabbage in half of the melted butter until softened, or briefly boil in salted water for 3-5 minutes.
  3. Prepare a milk mixture by melting the remaining butter with the chopped green onions in a small saucepan, then gently add the milk or cream without boiling.
  4. Mash the drained potatoes until smooth.
  5. Combine the sautéed greens with the mashed potatoes, seasoning with salt and pepper, and gradually mix in the warm milk mixture until creamy.
  6. Serve hot, creating a well in the center for melted butter.

Notes

Colcannon pairs beautifully with proteins like crispy bacon or roast chicken and can be enhanced with a sprinkle of fresh herbs or sautéed mushrooms.
