  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup Irish cream liqueur
  • 1/4 cup strong brewed cappuccino, cooled
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
  4. Mix the Irish cream liqueur, brewed cappuccino, egg, and vanilla extract until incorporated.
  5. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
  6. Turn the dough onto a floured surface and knead it gently until it comes together.
  7. Pat the dough into a circle, about 1 inch thick, and cut into wedges.
  8. Bake for 15-20 minutes, or until they are golden brown.
  9. Allow them to cool on a wire rack before serving.
