A hearty and tradition-filled Irish beef stew made with tender beef chuck, root vegetables, and the bold flavor of Guinness stout, perfect for cozy dinners.

- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 can (14.9 oz) Guinness stout
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Season the beef with salt and pepper, then add it to the pot. Brown the beef on all sides.
- Once browned, remove the beef from the pot and set it aside.
- Add the onions and garlic to the same pot, cooking until softened and fragrant.
- Stir in the carrots and potatoes, then return the beef to the pot.
- Pour in the Guinness stout and beef broth, stirring in the tomato paste, Worcestershire sauce, thyme, and bay leaf.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 120 minutes, or until the beef becomes tender.
- Taste and adjust the seasoning as needed before serving. Garnish with fresh parsley.
