- 1 tablespoon olive oil
- 5 bratwurst sausages (or Irish sausages)
- 2 tablespoons butter
- 1 large yellow onion, sliced
- 3 tablespoons all-purpose flour
- 1/2 cup Guinness stout beer
- 1.5 cups beef broth
- Salt and black pepper to taste
- 2.5 lbs gold potatoes, peeled and diced
- 2 teaspoons kosher salt (or 1 teaspoon table salt)
- 1/4 cup butter, melted
- 3/4 cup whole milk, warmed
- Chopped parsley or green onions (optional)
Instructions
- Heat the olive oil over medium heat in a skillet. Add the sausages and cook until they are browned and nearly cooked through. Remove and set aside.
- Melt the butter in the same skillet. Add the sliced onions, salt, and pepper. Cook for about 10 minutes until the onions soften and begin to caramelize.
- Sprinkle the flour over the onions and mix well for 1–2 minutes.
- Pour in the Guinness stout to deglaze the pan, scraping brown bits. Add the beef broth and combine.
- Return the sausages to the skillet. Let them simmer for 10–15 minutes until cooked through and gravy thickens.
- Place the diced potatoes in a pot of salted water. Cook until fork-tender, about 10–12 minutes. Drain and return to pot.
- Mash the potatoes with the melted butter and warmed milk until creamy. Season with salt and pepper.
- Serve the mashed potatoes on plates, top with sausages, and drizzle with Guinness onion gravy.
Notes
For a vegetarian version, substitute sausages for your favorite type and use vegetable broth.
