Description

A comforting dish combining rich sausages and creamy mashed potatoes, perfect for chilly nights.


Ingredients

  • 1 tablespoon olive oil
  • 5 bratwurst sausages (or Irish sausages)
  • 2 tablespoons butter
  • 1 large yellow onion, sliced
  • 3 tablespoons all-purpose flour
  • 1/2 cup Guinness stout beer
  • 1.5 cups beef broth
  • Salt and black pepper to taste
  • 2.5 lbs gold potatoes, peeled and diced
  • 2 teaspoons kosher salt (or 1 teaspoon table salt)
  • 1/4 cup butter, melted
  • 3/4 cup whole milk, warmed
  • Chopped parsley or green onions (optional)

Instructions

  1. Heat the olive oil over medium heat in a skillet. Add the sausages and cook until they are browned and nearly cooked through. Remove and set aside.
  2. Melt the butter in the same skillet. Add the sliced onions, salt, and pepper. Cook for about 10 minutes until the onions soften and begin to caramelize.
  3. Sprinkle the flour over the onions and mix well for 1–2 minutes.
  4. Pour in the Guinness stout to deglaze the pan, scraping brown bits. Add the beef broth and combine.
  5. Return the sausages to the skillet. Let them simmer for 10–15 minutes until cooked through and gravy thickens.
  6. Place the diced potatoes in a pot of salted water. Cook until fork-tender, about 10–12 minutes. Drain and return to pot.
  7. Mash the potatoes with the melted butter and warmed milk until creamy. Season with salt and pepper.
  8. Serve the mashed potatoes on plates, top with sausages, and drizzle with Guinness onion gravy.

Notes

For a vegetarian version, substitute sausages for your favorite type and use vegetable broth.
