  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup peas (fresh or frozen)
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 tablespoon tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the chopped onion and minced garlic. Cook for about 5 minutes until the onions become translucent.
  3. Stir in the sliced carrots and diced potatoes, cooking for another 5 minutes.
  4. Mix in the green beans, peas, and bell pepper. Stir everything together well.
  5. Pour in the vegetable broth, then add the tomato paste, soy sauce, thyme, and rosemary. Give it a good mix.
  6. Increase the heat until it comes to a boil, then reduce to low heat.
  7. Cover the pot and let it simmer for 30-40 minutes, stirring occasionally until the veggies are tender.
  8. Add salt and pepper according to your preference.
  9. Remove from heat, garnish with fresh parsley, and enjoy!

Notes

Feel free to swap vegetables based on what you have on hand. For creamier texture, blend a portion of the stew before serving.
