Description

A quick yet satisfying baked salmon dish with spinach and creamy mozzarella, perfect for weeknights or special occasions.


Ingredients

  • 2 fillets of Salmon
  • Salt (to taste)
  • Pepper (to taste)
  • 300 g Spinach (thawed and drained)
  • 1 Onion (sliced)
  • 2 cloves Garlic (minced)
  • 200 g Sour Cream
  • 150 g Mozzarella
  • 1 tbsp Olive Oil

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Season the salmon fillets generously with salt and pepper on both sides.
  3. In a skillet, heat olive oil over medium heat.
  4. Add the sliced onion and minced garlic, and sauté until the onions turn translucent.
  5. Stir in the spinach until heated through, then remove from heat.
  6. In a bowl, mix the sautéed spinach with sour cream.
  7. Place the seasoned salmon in a baking dish and spread the spinach mixture evenly over each fillet.
  8. Top with mozzarella, making sure each piece of fish is well-covered.
  9. Bake in the preheated oven for about 15-20 minutes or until the salmon is cooked through and the cheese is bubbly and golden.
  10. Serve hot and enjoy!

Notes

Feel free to swap fresh spinach for frozen spinach or experiment with different types of cheese.
