- 2 fillets of Salmon
- Salt (to taste)
- Pepper (to taste)
- 300 g Spinach (thawed and drained)
- 1 Onion (sliced)
- 2 cloves Garlic (minced)
- 200 g Sour Cream
- 150 g Mozzarella
- 1 tbsp Olive Oil
Instructions
- Preheat your oven to 200°C (400°F).
- Season the salmon fillets generously with salt and pepper on both sides.
- In a skillet, heat olive oil over medium heat.
- Add the sliced onion and minced garlic, and sauté until the onions turn translucent.
- Stir in the spinach until heated through, then remove from heat.
- In a bowl, mix the sautéed spinach with sour cream.
- Place the seasoned salmon in a baking dish and spread the spinach mixture evenly over each fillet.
- Top with mozzarella, making sure each piece of fish is well-covered.
- Bake in the preheated oven for about 15-20 minutes or until the salmon is cooked through and the cheese is bubbly and golden.
- Serve hot and enjoy!
Notes
Feel free to swap fresh spinach for frozen spinach or experiment with different types of cheese.
